Cilantro Lime Salad Dressing

I created this cilantro-lime dressing after having a delicious grilled chicken salad at TGI Friday's. I was determined to figure out how to make their cilantro-lime dressing, and this is what I came up with. Serve it over a hearty green salad topped with grilled chicken.

Ingredients

  • 1 medium jalapeno pepper, seeded and coarsely chopped

  • 1 clove garlic

  • ¾ teaspoon minced fresh ginger root

  • cup honey

  • ¼ cup lime juice

  • ¼ cup packed cilantro leaves

  • 2 teaspoons balsamic vinegar

  • ½ teaspoon salt, or to taste

  • ½ cup extra-virgin olive oil

Directions

  1. Pulse jalapeño, garlic, and ginger in a food processor until finely chopped. Add honey, lime juice, cilantro, vinegar, and salt; pulse 3 to 4 times to blend. Pour oil in slowly, with the processor running, until dressing is smooth. Taste and season with salt if needed before serving.
