Easy Carrot Cake Bars

This recipe for carrot bars uses baby food carrots and turns out very moist. I frost them with cream cheese frosting and then cut them into bars.

Ingredients

  • 2 cups all-purpose flour

  • 2 teaspoons baking soda

  • 2 teaspoons ground cinnamon

  • 1 teaspoon salt

  • 2 cups white sugar

  • 1 ½ cups vegetable oil

  • 4 large eggs

  • 3 (4 ounce) jars carrot baby food

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10x15-inch jelly roll pan.

  2. Sift together flour, baking soda, cinnamon, and salt in a large bowl. Set aside.

  3. Beat together sugar, oil, and eggs in another large bowl until smooth. Mix in flour mixture until just combined. Stir in carrot baby food until incorporated. Spread batter into the prepared pan.

  4. Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, about 20 minutes. Allow to cool completely on a wire rack.
