Mac and cheese with bow tie pasta, Colby cheese, and leftover ham. There usually aren't any leftovers when I serve this because my family gobbles it right up.

Ingredients

  • 1 (8 ounce) package bow tie pasta

  • ¼ cup butter

  • 1 clove garlic, minced

  • ¼ cup all-purpose flour

  • ½ teaspoon salt

  • teaspoon ground black pepper

  • 2 cups milk

  • 2 ½ cups shredded Colby cheese

  • ½ teaspoon prepared mustard

  • 4 ounces cooked ham, julienned

  • ¼ cup grated Parmesan cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Bring a large pot of lightly salted water to a boil. Cook bow tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes. Drain.

  3. Melt butter in a large saucepan over medium heat. Add garlic and sauté until fragrant, about 30 seconds. Whisk in flour, salt, and pepper; cook and stir until smooth and fragrant, 1 to 2 minutes. Whisk in milk, a little at a time, then bring to a boil and cook for 1 minute. Stir Colby cheese and mustard; cook, stirring occasionally, until cheese is melted. Remove from the heat and stir in pasta and ham. Pour mixture into a 2-quart baking dish and sprinkle Parmesan over top.

  4. Bake in the preheated oven until bubbly and golden, 20 to 25 minutes.
