Ingredients

  • 5 cups whole milk, or as needed

  • 10 parsnips, peeled and cubed

  • 1 teaspoon salt, or more to taste

  • ¼ cup butter

  • 1 teaspoon dried thyme

  • ½ teaspoon ground black pepper, or more to taste

  2. Pour milk into a large pot over medium-low heat; bring to a simmer. Add parsnips and salt. Cover and cook until parsnips are tender, 25 to 30 minutes.

  3. Drain parsnips, reserving warm milk in a separate container.

  4. Mash together parsnips, 1 cup reserved warm milk, butter, thyme, and pepper in the same pot using a hand mixer or blender. Add more warm milk until desired consistency is reached. Season with salt and pepper.

You can cook the parsnips in any type of cream or milk — the heavier the cream, the creamier the result.

You can use 1 tablespoon of fresh thyme instead of dried.
