Squash blossoms, as they're also known, are the edible flowers that grow on the zucchini plant. With their vibrant yellow hue and elegant petals, they’re actually quite pretty! The tender, slightly sweet blossoms can be eaten raw or cooked. When fried, they are deliciously crispy.

Ingredients

  • 6 zucchini flowers

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon salt, plus more to taste

  • ½ cup milk

  • 2 large eggs

  • 1 teaspoon olive oil

  • 1 quart vegetable oil for frying, or as needed

Directions

  1. Clean zucchini flowers and dry with a paper towel.

  2. Mix flour, baking powder, and salt together in a bowl. Whisk milk, eggs, and olive oil together in a separate bowl; stir in flour mixture until batter is smooth.

  3. Heat vegetable oil in a deep skillet over medium heat.

  4. Working in batches if needed, dip flowers into the batter, then gently place into the hot oil. Fry until golden and crispy, 2 to 5 minutes. Transfer fried flowers to a paper towel-lined plate and season with salt.
