Ingredients

  • 5 medium russet potatoes, scrubbed and quartered

  • 1 (8 ounce) package cream cheese, softened

  • 2 tablespoons milk

  • 1 tablespoon salted butter

  • salt to taste

Directions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer to a bowl.

  2. While potatoes are still hot and steaming, add cream cheese, milk, butter, and salt. Blend with an electric hand mixer until creamy and smooth.

Cook’s Note

Make sure you add enough salt — it will enhance the flavor of the cream cheese.
