Ingredients

  • ¼ cup all-purpose flour

  • 1 ½ tablespoons brown sugar

  • ½ teaspoon baking powder

  • 1 dash salt

  • ¼ teaspoon cinnamon

  • ¼ teaspoon vanilla extract

  • 3 tablespoons almond milk

  • ½ tablespoon vegetable oil

  • 3 tablespoons shredded zucchini

  • ½ tablespoon chopped walnuts

Directions

  1. Mix together flour, brown sugar, baking powder, salt, cinnamon, vanilla, almond milk, and vegetable oil in an 8- to 12-ounce mug. Stir until well combined.

  2. Pat dry the zucchini between 2 paper towels. Add zucchini and walnuts to the mixture, and stir until just combined.

  3. Cook uncovered in the microwave on high power for 1½ to 2 minutes. Enjoy straight from the mug.
