Sauteed Red Cabbage

This sauteed red cabbage, prepared with vinegar and mustard, is easy to throw together and pairs nicely with grilled meat or smoked sausage. I also like to put it on top of hot dogs like you would sauerkraut. This is pretty tart so you'll want to double the sugar if you like things on the sweeter side.

Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, sliced into petals

  • 1 1/2 pounds red cabbage, shredded (1 small head)

  • 1/4 cup apple cider vinegar

  • 1 tablespoon stone ground mustard

  • 2 teaspoons white sugar

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Heat oil in a large skillet over medium-high heat. Add onion and saute 2 minutes. Add cabbage and saute 5 minutes more.

  2. Stir in vinegar, mustard, sugar, salt, and pepper. Saute until cabbage is as tender as you like, about 10 minutes.
