Breakfast casseroles are my go-to solution for brunch entertaining, as they easily serve a crowd and can be assembled ahead of time. This recipe combines spicy chorizo, sour cream, cheddar cheese, eggs, and frozen hash browns for a creamy, decadent dish that’s sure to please adults and kids alike. Whisking in sour cream with the eggs adds richness, and makes for a silky-smooth texture. I love to serve it with sliced avocado, chopped green onions, and plenty of hot sauce, but it’s delicious straight out of the oven too!  

Try swapping the chorizo for hot or sweet Italian sausage for a different flavor profile, or use vegan chorizo for a vegetarian crew. When served with fresh fruit and a simple green salad, this ultimate breakfast casserole makes for a simple yet tasty brunch or lunch—plus, any leftovers heat up well in the microwave for fast weekday breakfasts. If desired, you can assemble the casserole the night before you plan to serve it, then bake in the morning—just add 10 to 15 minutes to the baking time.

Ingredients

  • 1 pound frozen hashbrowns

  • 1 tablespoon olive oil

  • 1 pound fresh chorizo

  • 1 yellow onion, chopped

  • 12 eggs

  • 3 cups grated cheddar cheese, divided

  • 1 1/2 cups sour cream, divided

  • 1 cup whole milk

  • 1 teaspoon kosher salt

  • 1/2 teaspoon ground pepper

  • 1 cup chopped green onions

  • 1 avocado, sliced

  • 1/2 cup pickled jalapeños (optional)

  1. Gather all ingredients.

  2. Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-by-13-inch baking dish. Spread hash browns over the bottom of the baking dish.

  3. Heat olive oil in a large skillet over medium heat. Add chorizo and onion, using a flat wooden spoon to break up the meat into smaller pieces. Cook until browned, about 8 to 10 minutes. Set aside.

  4. Whisk eggs, 2 cups Cheddar cheese, 1 cup sour cream, milk, salt, and pepper in a large bowl. Stir in chorizo mixture.

  5. Pour egg mixture over hash browns in baking dish. Dollop remaining 1/2 cup sour cream over eggs, and sprinkle with remaining 1 cup cheese.

  6. Bake for 35 to 45 minutes, until just set in the center. Sprinkle with green onions, avocado, and pickled jalapeños, if using. Cut into squares and serve immediately.
