This stuffing is a sweet-and-savory combo of fall herbs and veggies with a smattering of tart cranberries and maple syrup. It's reminiscent of an autumn grain salad—the fresh butternut and cauliflower gives it a pleasantly chewy bite. A one-cup serving of this cauliflower rice-based stuffing has just 60 calories, 0 grams of fat, 13 grams of carbs, 2 grams of fiber, 8 grams of sugar, 150 mg of sodium and 1 gram of protein.

To be honest, we probably won't be swapping this in for our favorite bread-laden stuffing recipes, but it is a really nice option for those who are sticking to their weight-loss goals, trying to cut carbs or just want to have an extra healthy side to lighten up their plate this year. It would also be really delicious as a warm salad with some chicken and greens. Yum!
