Lemon-Garlic-Parmesan Vinaigrette

This cheesy vinaigrette picks up savory notes from grated Parmesan and Dijon mustard. It works well tossed with anything from delicate greens like butterhead to hardier greens like escarole. Try it drizzled over roasted veggies or tossed with cooked grains.

Ingredients

  • 3/4 cup extra-virgin olive oil

  • 5 tablespoons red-wine vinegar

  • 1/4 cup grated Parmesan cheese

  • 3 tablespoons lemon juice

  • 1 1/2 tablespoons Dijon mustard

  • 1 clove garlic, grated

  • 1/4 teaspoon salt

  • Ground pepper to taste

Directions

  1. Combine oil, vinegar, Parmesan, lemon juice, mustard, garlic, salt and pepper in a jar with a tight-fitting lid. Shake until well blended.

To make ahead

Refrigerate for up to 1 week. Shake well before serving.
