Peach & Spinach Salad with Feta

This simple and refreshing salad recipe takes just 15 minutes to prepare. Each bite delivers the taste of sweet juicy peach, tangy feta, and toasted pine nuts and will leave you completely satisfied--but not over-stuffed!

Ingredients

  • 6 cups packaged fresh baby spinach

  • 2 tablespoons white-wine vinegar

  • 1 tablespoon olive oil

  • 1 tablespoon finely chopped shallot

  • 2 teaspoons water

  • 1 teaspoon honey mustard

  • teaspoon salt

  • 1 medium peach, pitted, or 1 apple, cored and thinly sliced

  • 3 tablespoons crumbled reduced-fat feta cheese

  • 1 tablespoon pine nuts, toasted

Directions

  1. Place spinach in a large bowl; set aside.

  2. Combine vinegar, olive oil, shallot, water, honey mustard, and salt in a screw-top jar. Cover and shake well. Add to spinach and toss well.

  3. Divide spinach among four salad plates. Top with peach or apple slices, feta cheese, and pine nuts.
