Mashed Celeriac with Herbs

Celeriac is a delicious low-carb alternative to mashed potatoes. Pureeing the steamed celeriac in a food processor ensures a smooth, light and fluffy texture.

Ingredients

  • 1 ½ pounds celeriac (celery root), peeled and cut into 1-inch pieces

  • 4 tablespoons (1/2 stick) butter, softened

  • ½ cup unsalted chicken broth, warmed

  • 3 tablespoons chopped fresh herbs, such as chives, dill and/or thyme

  • ½ teaspoon kosher salt

Directions

  1. Bring 2 inches of water to a boil in a large saucepan fitted with a steamer basket. Add celeriac, cover and steam until tender, adding water as needed, about 40 minutes. Drain.

  2. Transfer the celeriac to a food processor. Add butter, broth, herbs and salt. Puree until smooth, about 1 minute. Serve hot.

Tips

To make ahead: Refrigerate for up to 2 days. Reheat in a covered baking dish at 350 degrees F for about 25 minutes.
