Ingredients

  • 2 tablespoons lemon juice

  • 1 teaspoon honey

  • 1 teaspoon Dijon mustard

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 2 tablespoons extra-virgin olive oil

  • 1 (5 ounce) package arugula

  • 3 cups chopped cantaloupe (about 1 pound)

  • 1 cup crumbled goat cheese (about 4 ounces)

  • cup shelled unsalted pistachios, toasted

  • ¼ cup torn fresh basil leaves

Directions

  1. Whisk lemon juice, honey, mustard, salt and pepper together in a large bowl. Slowly whisk in oil. Add arugula and cantaloupe and toss to coat. Transfer to a serving platter and top with goat cheese, pistachios and basil.
