Ingredients

1 pound dried lima beans, soaked overnight

1 medium onion, coarsely chopped

8 cups turkey stock

2 cloves garlic, crushed

1 ¼ teaspoons salt

½ teaspoon ground pepper

½ teaspoon ground cumin

½ teaspoon crushed red pepper
Directions

Drain and rinse beans. Transfer to a large pot and add onion, broth, garlic, salt, pepper, cumin and crushed red pepper. Bring to a boil.

Reduce heat to maintain a simmer. Cover and cook until the beans are tender, 1 1/2 to 2 hours. Serve the beans with the broth.
Tips
To make ahead: Refrigerate for up to 2 days.
