Jalapeño Creamed Corn

Sweet and savory creamed corn gets a creamy kick from Cheddar cheese and jalapeño. We love the added spice sliced jalapeño adds as a garnish, but this is also great without it if you want to tame the heat. Try it alongside grilled steak or chicken or with your Thanksgiving spread.

Ingredients

  • 3 tablespoons unsalted butter

  • 3 tablespoons all-purpose flour

  • 1 cup whole milk

  • ½ cup shredded Cheddar cheese

  • ¼ cup cream cheese

  • 3 cups thawed frozen corn

  • 1 jalapeño pepper, seeded and diced, plus sliced jalapeño for garnish

  • ½ teaspoon salt

Directions

  1. Melt butter in a large saucepan over medium heat. Stir in flour; cook, stirring constantly, until light in color and bubbly, about 2 minutes. Reduce heat to medium-low; stir in milk, Cheddar and cream cheese; cook, stirring often, until melted and slightly thickened, about 5 minutes. Stir in corn, jalapeño and salt; cook, stirring occasionally, until the corn is fully coated and the mixture is cohesive, about 5 minutes. Garnish with jalapeño slices, if desired. Serve immediately.
