Shaved Root Vegetable Salad with Pistachios

This centerpiece-worthy salad calls for buying up the most colorful roots in the produce section. We like using a rainbow of beets and carrots for the most stunning presentation.

Shaved Root Vegetable Salad with Pistachios

Ingredients

  • ½ teaspoon grated orange zest

  • 2 tablespoons orange juice

  • 2 tablespoons champagne vinegar

  • 2 tablespoons extra-virgin olive oil

  • ½ teaspoon honey

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • 1 pound beets and/or carrots, peeled

  • ¼ cup crumbled goat cheese

  • ¼ cup chopped toasted pistachios

  • ¼ cup chopped fresh mint

Directions

  1. Whisk orange zest, orange juice, vinegar, oil, honey, salt and pepper in a large bowl.

  2. Using a vegetable peeler, thinly slice vegetables into ribbons. Add to the bowl and toss with the dressing. Let stand for 10 minutes.

  3. Arrange the vegetables on a platter and drizzle with any dressing remaining in the bowl. Top with goat cheese, pistachios and mint.
