Roasted Cabbage with Horseradish Cream

Our roasted cabbage wedges have a beautiful char on the outside while the insides get slightly tender.

Ingredients

  • ½ medium cabbage, cut into 4 wedges

  • 1 tablespoon extra-virgin olive oil

  • ½ tablespoon salt, divided

  • ½ teaspoon ground pepper, divided

  • ½ cup reduced-fat sour cream

  • 1 tablespoon prepared horseradish

Directions

  1. Preheat oven to 450°F.

  2. Place cabbage on a rimmed baking sheet and brush cut sides with oil. Sprinkle with ¼ teaspoon each salt and pepper. Roast, flipping once halfway through, until crispy on the outside and tender on the inside, 20 to 25 minutes.

  3. Meanwhile, combine sour cream, horseradish and the remaining ¼ teaspoon each salt and pepper in a small bowl. Serve the cabbage with the horseradish cream.
