Watermelon & Arugula Salad

This simple watermelon and arugula salad is slightly sweet, which mellows the peppery arugula. The basil works beautifully with both the arugula and the watermelon, and the briny, salty feta cheese is the perfect complement to the rest of the flavors.

Ingredients

  • 3 tablespoons extra-virgin olive oil

  • 3 tablespoons white balsamic vinegar

  • 2 tablespoons chopped shallot

  • 1 tablespoon honey

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 5 cups loosely packed arugula (about 3 ounces)

  • 3 cups cubed seedless watermelon

  • ½ cup crumbled feta cheese

  • ¼ cup chopped fresh basil

Directions

  1. Whisk oil, vinegar, shallot, honey, salt and pepper in a large bowl until well combined. Add arugula, watermelon, feta and basil; toss gently to coat. Serve immediately.
