Ingredients

  • 8 ounces whole-wheat rotini pasta

  • 2 tablespoons extra-virgin olive oil

  • 1 (11 ounce) package cooked chicken sausage, sliced

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 4 cloves garlic, minced

  • ½ cup dry white wine

  • Zest and juice of 1 lemon

  • 10 cups chopped fresh spinach

  • 4 tablespoons grated Parmesan cheese, divided

Directions

  1. Cook pasta according to package directions. Drain and set aside.

  2. Meanwhile, heat oil in a large high-sided skillet over medium-high heat. Add sausage, salt and pepper; cook, stirring occasionally, until just cooked through, 5 to 7 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute. Stir in wine, lemon zest and lemon juice; bring to a simmer.

  3. Remove from heat. Stir in spinach and the cooked pasta. Cover and let stand until the spinach is just wilted. Divide among 4 plates and top each serving with 1 tablespoon Parmesan.

* Daily Values (DVs) are the recommended amounts of nutrients to consume each day. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
