This veggie-packed Scandinavian-style riff on a lox bagel adds cucumbers, pickled beets and fresh dill for flavor and crunch.

Ingredients

  • 2 tablespoons cream cheese

  • 1 pumpernickel bagel thin or 2 slices pumpernickel bread, toasted

  • 1 ounce sliced smoked salmon

  • ¼ cup sliced cucumber

  • ¼ cup sliced pickled beets

  • 1 hard-boiled large egg, sliced

  • 1 tablespoon chopped fresh dill

Directions

  1. Spread cream cheese on 1 bagel thin half (or toast slice). Top with salmon, cucumber, beets and egg. Sprinkle with dill and top with the remaining bagel thin half (or toast slice).
