2 tablespoons white-wine vinegar

2 tablespoons finely chopped shallot

1 ½ teaspoons Dijon mustard

¼ teaspoon salt

⅓ cup extra-virgin olive oil

1 pound mixed radishes (such as Easter egg, French breakfast and/or watermelon radishes), thinly sliced

½ cup thinly sliced celery

1 cup loosely packed fresh flat-leaf parsley leaves

½ cup shaved Parmesan cheese
Directions

Whisk vinegar, shallot, mustard and salt together in a large bowl. Slowly drizzle in oil, whisking constantly. Add radishes and celery; toss to combine. Gently fold in parsley and Parmesan. Let stand at room temperature until the flavors meld, about 15 minutes.
