Radish Salad with Parmesan

This bright and crispy radish salad with Parmesan is the perfect healthy salad for spring when radishes are at their peak.

Ingredients

  • 2 tablespoons white-wine vinegar

  • 2 tablespoons finely chopped shallot

  • 1 ½ teaspoons Dijon mustard

  • ¼ teaspoon salt

  • cup extra-virgin olive oil

  • 1 pound mixed radishes (such as Easter egg, French breakfast and/or watermelon radishes), thinly sliced

  • ½ cup thinly sliced celery

  • 1 cup loosely packed fresh flat-leaf parsley leaves

  • ½ cup shaved Parmesan cheese

Directions

  1. Whisk vinegar, shallot, mustard and salt together in a large bowl. Slowly drizzle in oil, whisking constantly. Add radishes and celery; toss to combine. Gently fold in parsley and Parmesan. Let stand at room temperature until the flavors meld, about 15 minutes.
