2 cups unsalted vegetable broth

1 (15 ounce) can no-salt-added crushed tomatoes

1 cup reduced-sodium vegetarian refried beans

½ cup red enchilada sauce

1 tablespoon chopped chipotle pepper in adobo

1 (15 ounce) can no-salt-added kidney beans, rinsed

1 (15 ounce) can no-salt-added black beans, rinsed

2 (10 ounce) bags frozen mixed vegetables

1 (10 ounce) bag frozen corn

1 teaspoon garlic powder

1 teaspoon onion powder

¾ teaspoon salt

½ cup fresh cilantro, chopped

1 tablespoon cider vinegar
Directions

Whisk broth, crushed tomatoes, refried beans, enchilada sauce and chipotle together in a large pot. Add kidney beans, black beans, frozen mixed vegetables, frozen corn, garlic powder, onion powder and salt; stir to combine. Bring to a boil over high heat. Reduce heat to medium; cook, stirring occasionally, until the chili has thickened slightly, 12 to 15 minutes.

Remove from heat, stir in cilantro and vinegar.
