1 medium shallot, thinly sliced

2 cloves garlic, thinly sliced

2 tablespoons lemon juice

⅔ cup extra-virgin olive oil

¼ cup finely chopped fresh parsley

2 tablespoons finely chopped fresh dill

2 tablespoons finely chopped fresh oregano

½ teaspoon salt

2 15-ounce cans no-salt-added white beans, such as great northern or butter beans, rinsed

2 whole dried chiles

2 1-inch strips lemon zest
Directions

Combine shallot, garlic and lemon juice in a large bowl and set aside for 10 minutes.

Add oil, parsley, dill, oregano and salt and whisk to combine. Add beans, chiles and lemon zest and toss to coat.
To make ahead
Refrigerate for up to 3 days.
