Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 1 large yellow onion, chopped

  • 1 medium yellow bell pepper, chopped

  • 6 cloves garlic, minced

  • 1 pound ground chicken

  • 2 tablespoons tomato paste

  • 1 tablespoon chili powder

  • 2 teaspoons dried oregano

  • 1 teaspoon ground coriander

  • ½ teaspoon salt

  • ½ teaspoon ground pepper

  • 2 (15.5 ounce) cans no-salt-added cannellini beans, rinsed

  • 1 (28 ounce) can no-salt-added crushed tomatoes

  • 2 cups reduced-sodium chicken broth

  • ¾ cup shredded Cheddar cheese

  • ¾ cup plain whole-milk strained yogurt, such as Greek-style

  • ¾ cup thinly sliced scallions

  • Lime wedges for serving

Directions

  1. Heat oil in a large Dutch oven over medium-high heat. Add onion, bell pepper and garlic; cook, stirring often, until tender, about 5 minutes. Add ground chicken; cook, stirring occasionally, until the chicken crumbles and is no longer pink and the liquid has evaporated, about 8 minutes. Stir in tomato paste, chili powder, oregano, coriander, salt and pepper; cook, stirring constantly, until the tomato paste caramelizes and the spices are fragrant, about 1 minute.

Nutrition information is calculated by a registered dietitian using an ingredient database but should be considered an estimate.

* Daily Values (DVs) are the recommended amounts of nutrients to consume each day. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
