Cabbage Salad with Lemon-Garlic Vinaigrette

This crisp cabbage salad with lemon-garlic vinaigrette feels like a lightened-up version of coleslaw with a tangy lemon dressing and a light mix of fresh herbs.

Ingredients

  • ½ cup Lemon-Garlic Vinaigrette

  • 3 tablespoons finely chopped fresh chives

  • 2 tablespoons finely chopped fresh parsley

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • 8 cups shredded cabbage (preferably red and green mixed)

Directions

  1. Whisk vinaigrette, chives, parsley, salt and pepper in a large bowl. Add cabbage and toss to coat. Let stand for 10 minutes. Toss again; serve immediately or cover and refrigerate for up to 1 hour.
