This creamy corn and bacon pasta picks up salty notes from the bacon and has pops of sweet corn in a light, creamy sauce. This quick pasta recipe is perfect for a warm summer weeknight when corn is at its peak.

Ingredients

  • 8 ounces whole-wheat spaghetti

  • 2 slices bacon

  • 1 ½ cups corn kernels (from 2 large ears)

  • 1 cup sliced scallions

  • 1 cup quartered cherry or grape tomatoes

  • ¼ cup dry white wine

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper, plus more for garnish

  • cup heavy cream

  • ¼ cup chopped fresh basil

  • Grated Parmesan cheese for serving

Directions

  1. Bring a large saucepan of water to a boil. Add spaghetti and cook according to package directions. Drain.

  2. Meanwhile, cook bacon in a large skillet over medium heat until crispy, 5 to 7 minutes. Transfer to a paper-towel-lined plate to drain. Chop when cool enough to handle. Add corn and scallions to the bacon fat in the pan; cook over medium heat, stirring, until softened, 3 to 4 minutes. Add tomatoes, wine, salt and pepper and cook, stirring and scraping up any browned bits, until the liquid has mostly evaporated and the tomatoes are softened, 2 to 3 minutes. Add cream and bring to a simmer. Return the bacon to the pan along with the spaghetti and basil. Cook, tossing to coat well, until heated through, 1 to 2 minutes. Garnish with pepper and serve with Parmesan, if desired.
