Shredded Carrot Salad with Spiced Orange Dressing

This shredded carrot salad makes a delicious side dish. Cinnamon provides spice in the dressing, while lemon juice offers a little tanginess to balance the flavors. You can make this salad up to 4 hours ahead—any longer and the carrots will begin to lose their crunch. If you have a food processor, use it to speed up the process of grating the carrots.

Ingredients

  • 2 tablespoons orange juice

  • 2 tablespoons lemon juice

  • 1 teaspoon extra-virgin olive oil

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 4 cups grated carrots (about 6 large)

  • 2 tablespoons minced fresh flat-leaf parsley

Directions

  1. Whisk orange juice, lemon juice, oil, cinnamon and salt in a large bowl. Add carrots and parsley; toss to coat with the dressing. Serve immediately or refrigerate for up to 4 hours.
