Air-Fryer Broccoli-Cheddar Quesadillas

Lightly charred garlicky broccoli and Cheddar make a delicious filling for these air-fryer quesadillas that both kids and adults will love. If you like, include cubes of ham in the quesadillas. A quick honey-mustard dipping sauce provides a hint of sweetness.

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 2 cups small broccoli florets

  • 2 cloves garlic, minced

  • ¼ teaspoon salt

  • 4 (8 inch) whole-wheat tortillas

  • 2 cups shredded Cheddar cheese

  • ½ cup cubed cooked ham (Optional)

  • Cooking spray

  • ¼ cup mayonnaise

  • 2 tablespoons honey mustard

Directions

  1. Preheat a 6-quart air fryer to 325℉.

  2. Heat oil in a large skillet over medium heat. Add broccoli, garlic and salt; cook, stirring occasionally, until the broccoli is just tender, 8 to 10 minutes.

  3. Place 1 tortilla on a work surface and top one half with 1/2 cup cheese, 1/2 cup broccoli and, if desired, 2 tablespoons ham; fold the tortilla in half to close. Repeat with the remaining tortillas, cheese and broccoli (and ham, if using).

  4. Working in batches as necessary, coat both sides of the quesadillas with cooking spray. Arrange the quesadillas in a single layer in the air-fryer basket; cook until golden and the cheese is melted, 8 to 10 minutes.

  5. Meanwhile, stir together mayonnaise and honey mustard in a small bowl. Serve the quesadillas with the sauce.
