Ingredients

½ cup finely grated Parmesan cheese

1 tablespoon extra-virgin olive oil, plus 1 teaspoon, divided

1 tablespoon unsalted butter, melted

1 ½ teaspoons finely chopped fresh sage

1 teaspoon finely chopped fresh rosemary

¼ teaspoon salt

¼ teaspoon ground pepper

1 pound baby Yukon Gold potatoes, halved
Directions

Preheat oven to 425°F.

Stir Parmesan, 1 tablespoon oil, butter, sage, rosemary, salt and pepper together in a small bowl.

Toss potatoes and the remaining 1 teaspoon oil together in a medium bowl. Spread the cut side of each potato with the cheese mixture (about 1/4 teaspoon) and place cut-side down on a large rimmed baking sheet.

Roast until the potatoes are tender and bottoms are golden, 20 to 25 minutes. Remove from the baking sheet with a thin spatula.
