Parmesan & Herb Crusted Potatoes

A crispy, savory cheese crust coats these roasted potatoes for a mouthwatering side dish that's sure to be loved by all. Chopped fresh herbs like rosemary and sage add brightness. Serve these potatoes alongside roasted chicken, steak or pork.

Ingredients

  • ½ cup finely grated Parmesan cheese

  • 1 tablespoon extra-virgin olive oil, plus 1 teaspoon, divided

  • 1 tablespoon unsalted butter, melted

  • 1 ½ teaspoons finely chopped fresh sage

  • 1 teaspoon finely chopped fresh rosemary

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 1 pound baby Yukon Gold potatoes, halved

Directions

  1. Preheat oven to 425°F.

  2. Stir Parmesan, 1 tablespoon oil, butter, sage, rosemary, salt and pepper together in a small bowl.

  3. Toss potatoes and the remaining 1 teaspoon oil together in a medium bowl. Spread the cut side of each potato with the cheese mixture (about 1/4 teaspoon) and place cut-side down on a large rimmed baking sheet.

  4. Roast until the potatoes are tender and bottoms are golden, 20 to 25 minutes. Remove from the baking sheet with a thin spatula.
