Roasted Savoy Cabbage with Pistachios & Lemon

Charred bits of tender-crisp savoy cabbage pick up the flavors of coriander and lemon in this delightful side dish. Serve alongside roasted chicken or fish.

Ingredients

  • 1 (1 1/2-pound) head savoy cabbage, cored and cut into 1- to 2-inch pieces

  • 3 tablespoons extra-virgin olive oil

  • 1 teaspoon ground coriander

  • ½ teaspoon salt

  • ½ teaspoon ground pepper

  • ½ teaspoon grated lemon zest

  • 1 tablespoon lemon juice

  • ¼ cup chopped unsalted roasted pistachios

Directions

  1. Preheat oven to 425°F. Toss cabbage with oil, coriander, salt and pepper on a large rimmed baking sheet. Roast, stirring halfway through, until tender and golden brown in places, about 25 minutes.

  2. Stir in lemon zest, lemon juice and pistachios.
