Bright, vibrant, and fresh, this green smoothie bowl is packed with fruit, vegetables, nuts, and seeds for a filling and satisfying way to start the day. Spinach gives the bowl its bright green color but you can’t even taste it thanks to the pineapple, banana, and ginger in the base. The only source of sweetness is from the fruit, while the avocado makes it super creamy. Fresh ginger adds a little zing and kick to the bowl. The bowl is topped off with fresh berries and some granola, nuts, and seeds for some crunch and texture.

  • What’s the easiest way to peel and grate ginger?

    We like to use a spoon to peel ginger; use the side edge to scrape off the peel. To grate ginger, use a Microplane.

Opt for a high-powered blender, such as a Vitamix, if you can. If your blender isn’t powerful enough, your smoothie bowl may have a slightly fibrous texture. Make sure to gradually increase the speed of your blender as you go; if you go straight to high speed, the heat of the motor can start melting your smoothie before it’s blended. If your blender has a smoothie setting, use that for this recipe. 

Make ahead

Freeze unpeeled bananas for up to three months ahead of time to have them on hand for smoothies.

Ingredients

  • 1 medium (6-ounce) avocado, halved and peeled

  • 1 medium (3 1/2-ounce) banana, frozen

  • 4 cups loosely packed fresh baby spinach

  • 2 cups frozen pineapple chunks

  • 1/2 cup bottled coconut water (such as Vita Coco)

  • 1 1/2 teaspoons grated fresh ginger

  • 1/2 cup fresh blueberries

  • 1/2 cup fresh raspberries

  • 1/2 cup granola

  • 1/4 cup sliced almonds, toasted

  • 1 teaspoon chia seeds

  • 1 teaspoon hemp seeds

Directions

  1. Process avocado, banana, spinach, pineapple, coconut water, and ginger in a blender until smooth and creamy, 1 to 2 minutes, increasing speed from low to medium-high; use tamper to help ingredients incorporate.

  2. Divide smoothie between 2 bowls (about 1 1/4 cups each). Top evenly with berries, granola, almonds, chia seeds, and hemp seeds.
