  • Whisk together packed light brown sugar, black pepper, kosher salt, and cayenne pepper in a small bowl. Place a lightly greased rack in each of 2 aluminum foil-lined 18- x 13-inch sheet pans; arrange thick-cut bacon slices in a single layer on the racks. Sprinkle spice mixture on both sides of bacon (about 1 unpacked tsp. per side), and rub to coat. Cover pans loosely with foil; refrigerate 8 to 24 hours. Uncover bacon; bake at 375°F, rotating pans halfway through baking time, until deep golden brown and crisp around the edges, about 40 minutes. Let bacon cool on racks in pans about 5 minutes. Transfer to a serving platter.
