Delicious Feta-Crusted Salmon

I created this feta-crusted salmon when my family asked me to come up with a new salmon dish. I used what I had on hand, and they loved it! It's pretty rich in flavor but not so high in fat, depending on what kind of ingredients you use.

Ingredients

  • cooking spray

  • 1 (2 pound) salmon fillet, bones removed

  • ½ cup crumbled feta cheese

  • cup light mayonnaise

  • 1 tablespoon light cream cheese

  • 1 tablespoon Dijon mustard

  • 1 tablespoon onion powder

  • 1 teaspoon balsamic vinegar

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon ground paprika

  • cup panko (Japanese bread crumbs) or regular dry bread crumbs

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Spray foil with a light coating of cooking spray, and place salmon on top.

  2. Mix feta, mayonnaise, cream cheese, Dijon, onion powder, vinegar, garlic powder, salt, pepper, and paprika together in a bowl until smooth. Spread mixture over salmon, then sprinkle bread crumbs over top, covering completely.

  3. Bake in the preheated oven until fish flakes easily with a fork, 35 to 45 minutes.
