Ingredients

  • 1 tablespoon blackberry jam

  • 1 teaspoon whole-grain mustard

  • 1/2 teaspoon finely chopped fresh rosemary

  • 2 slices whole-grain sandwich bread, preferably country-style

  • 3 slices Brie cheese (2 ounces)

  • Cooking spray

Directions

  1. Stir jam, mustard and rosemary together in a small bowl. Spread the mixture evenly on 1 side of 1 bread slice. Top with Brie slices and the second bread slice.

  2. Coat a small nonstick skillet with cooking spray; heat over medium-low heat. Coat the outsides of both bread slices with cooking spray. Place the sandwich in the heated skillet; cover and cook until the bottom is golden, about 3 minutes. Flip, cover and cook until golden on the bottom and the cheese has melted, 2 to 3 minutes more.
