Hoisin and honey combine for a sweet coating for tender chicken thighs in this easy stir-fry recipe. This versatile recipe can be served over steamed rice or used as a filling for lettuce wraps. Add a bag of frozen veggies to the wok after the chicken is finished cooking for a complete meal with a garnish of sliced scallions.

Ingredients

  • 1 ½ tablespoons honey

  • 1 ½ tablespoons hoisin sauce

  • 1 ½ teaspoons rice vinegar

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

  • 2 tablespoons canola oil, divided

  • 1 (2-inch) piece fresh ginger, peeled and cut into thin matchsticks

Directions

  1. Whisk honey, hoisin, vinegar, salt and pepper together in a medium bowl until combined. Add chicken; toss to coat. Cover and refrigerate for 30 minutes.

  2. Heat 1 tablespoon oil in a large wok or skillet over high heat. Remove half of the chicken from the marinade; add to the pan. Cook, stirring often, until golden brown and just cooked through, 3 to 4 minutes. Transfer to a large plate. Do not wipe the pan. Heat the remaining 1 tablespoon oil in the pan. Remove the remaining chicken from the marinade; add to the pan (reserve marinade). Cook, stirring often, until golden brown and just cooked through, 3 to 4 minutes.

  3. Return the cooked chicken to the pan along with any accumulated juices and leftover marinade; cook, stirring, until well incorporated, about 2 minutes. Add ginger; cook, stirring, until the sauce thickens and coats the chicken, about 1 minute.
