This tortellini casserole is comfort food at its finest. This easy-to-make dinner takes only 20 minutes to prep and is finished in under an hour. We use refrigerated tortellini, but frozen tortellini would also shine in this dish. If you’ve got leftover cooked vegetables, stir those into the mix or add chopped sun-dried tomatoes or olives for a boost of flavor.

Ingredients

  • 1 (20-ounce) package refrigerated cheese tortellini

  • 2 tablespoons extra-virgin olive oil

  • 1 cup chopped yellow onion

  • 3 cloves garlic, chopped

  • 1/2 teaspoon crushed red pepper

  • 1 (5-ounce) package baby spinach

  • 1 (25.5-ounce) jar lower-sodium marinara sauce

  • 1 1/2 cups shredded low-moisture part-skim mozzarella cheese, divided

  • 2 tablespoons grated Parmesan cheese

  • 2 tablespoons thinly sliced fresh basil

Directions

  1. Preheat oven to 350°F. Lightly coat a 7-by-11-inch baking dish with cooking spray.

  2. Bring a large pot of water to a boil over high heat. Cook tortellini according to package directions; drain and set aside.

  3. Meanwhile, heat oil in a large nonstick skillet over medium-low heat. Add onion, garlic and crushed red pepper; cook, stirring often, until tender and aromatic, about 10 minutes. Add spinach; cook, stirring often, until wilted, about 3 minutes.

  4. Stir in the tortellini, marinara and 1 cup mozzarella. Transfer to the prepared baking dish. Sprinkle with Parmesan and the remaining 1/2 cup mozzarella. Bake until the cheese is bubbly and lightly browned, 25 to 30 minutes. Sprinkle with basil before serving.
