The best egg white cocktails don't loudly announce that they're egg white cocktails. Instead, they're frothy, airy, and light. You can achieve a perfect layer of foam by giving the ingredients in your cocktail a dry shake, which means to vigorously shake the cocktail before adding ice. By doing this, you aerate the drink, adding tiny air bubbles that get trapped in the egg white and add body — think about the science behind how meringue gets light and fluffy as air is beaten into it.
