Banana-Caramel Sauce

This super-fast sauce comes together in just minutes and makes a next-level topping for Lena Sareini's Brown-Butter Banana Bread. Chunks of sweet, ripe banana get pureed into the cooked caramel, yielding a thick, rich sauce that amplifies the rich flavor of the banana bread.

Ingredients

  • ½ cup granulated sugar

  • 2 tablespoons light corn syrup

  • 1 teaspoon kosher salt

  • 1 cup plus 2 tablespoons heavy whipping cream, warmed

  • 2 cups finely diced ripe bananas

Directions

  1. Place sugar in a medium saucepan; add water to cover. Stir in corn syrup and salt, and bring to a boil over medium. Boil sugar mixture, stirring occasionally, until caramel in color, about 7 minutes. Whisk in warm cream, and return to a simmer. Add bananas, and cook, whisking constantly, until mixture is thoroughly combined, about 3 minutes. Remove saucepan from heat, and process with an immersion blender until sauce is smooth, about 1 minute.
