How To Store Pecan Pie So It Stays Fresh

Most egg-rich pecan pies should not be left out at room temperature.

A classic pecan pie is full of nutty pecans, yes, but the rich dessert also contains eggs, sugar (white and brown), corn syrup, butter, and vanilla. Given the number of eggs used in the filling—most recipes call for four whole eggs—along with the butter in the pie crust means pecan pie should not be kept on the kitchen counter.

This is a dessert that is best stored in the fridge or even the freezer. According to the USDA, homemade pies made with eggs must be refrigerated after cooking and cooling. This includes pecan pies and custard pies that also tend to contain dairy.

When To Refrigerate Pecan Pie

This will not only allow the filling to set but also heeds food safety rules.

The reason you don’t want to place a piping hot pecan pie in the fridge straight from the oven is because the heat from the pie and the pie dish will heat up other items in the fridge, potentially leading to spoilage. It’s a good practice to wait until food items are cool to the touch before adding them to a fridge—or freezer—full of cold items.

How Long Does Pecan Pie Last?

If you somehow manage to wind up with leftover pecan pie after serving it at Thanksgiving or a dinner party, do refrigerate the remaining pie. It will last for 3-4 days in the refrigerator and up to a couple of months in the freezer.

If you made a pecan pie in advance and want to freeze it for later, you’re in luck. Pecan pie freezes well and can be heated up when you’re ready to eat it. Here's how:

  1. Once you’ve given the pie a chance to cool, wrap it tightly in plastic wrap, and then foil, and store it flat in the freezer.
  2. When you’re ready for the pie, defrost it in the refrigerator (overnight works) and let it come to room temperature for 30 minutes or so before heating it in a 350 degree Fahrenheit oven.
