A wonderful black bean salsa that's quick to make with canned black beans, Mexican-style corn, tomatoes, and green onion. I can never make enough when I have a party! Serve with tortilla chips.

Ingredients

  • 3 (15 ounce) cans black beans, drained and rinsed

  • 1 (11 ounce) can Mexican-style corn, drained

  • 2 (10 ounce) cans diced tomatoes with green chile peppers, partially drained

  • 2 tomatoes, diced

  • 2 bunches green onions, chopped

  • cilantro leaves, for garnish

Directions

  1. Mix black beans, Mexican-style corn, diced tomatoes with green chile peppers, tomatoes, and green onion stalks together in a large bowl. Garnish with desired amount of cilantro leaves.

Cook’s Note

For the best flavor, I chill this salsa for 8 to 24 hours before serving.
