The first time I sipped Hennessy out of a teacup, I was at Bonnie’s, Brooklyn’s Cantonese hot spot helmed by Food & Wine 2021 Best New Chef Calvin Eng. Years later, I found myself doing the same thing in New Orleans at the Tales of the Cocktail festival, at an activation from Moet-Hennessy designed to celebrate their spirits portfolio in conjunction with local makers. The Coco Café cocktail, made with cold brew from French Truck coffee, is a creamy, sweet, soothing drink that feels right at home in a glass tea cup, whether you’re sipping it in the morning (no judgment, here) or at the end of a big night out. 

While Jordan Bushell (the developer of the Coco Café, and a global brand ambassador for Hennessy) used coconut-washed Cognac to make the drink I tried at Tales, he says home bartenders can substitute condensed coconut milk to channel a similar flavor and sweetness. — Oset Babür-Winter

What is the difference between dry and sweet vermouth?

Dry vermouth is lean, tart, herbaceous, and dry, while sweet vermouth is a rich, spiced and herbaceous drink, often used in drinks like the Manhattan and the Negroni

What is the difference between iced coffee and cold brew?

Although they look similar, cold brew and iced coffee are not the same! Cold brew has a bolder flavor than iced coffee since the brewing process is longer, and iced coffee is milder in taste. Cold brew is also higher in caffeine content relative to iced coffee.

What is fine straining?

Fine straining a cocktail simply means running your drink through a mesh sieve. This results in a smoother drinking experience.

Ingredients

  • 2 ounces Cognac (such as Hennessy VS)

  • 1 teaspoon condensed coconut milk

  • 1/2 ounce sweet vermouth

  • 1/2 ounce pineapple liqueur 

  • 1/4 ounce cold brew

  • 1 dash lime bitters 

  • 1 dash chocolate bitters 

  • 1 orange twist (for garnish)

Directions

  1. Add Cognac and condensed coconut milk to a mixing glass and stir to dissolve, for about 20 seconds). 

  2. Add sweet vermouth, pineapple liqueur, cold brew, lime bitters, and chocolate bitters to mixing glass. Stir to chill.

  3. Fine strain drink into teacup, garnish with orange twist.
