A Rum Rickey is a classic cocktail that belongs to the Rickey family of drinks, which typically consists of a base spirit (usually gin or bourbon), lime juice, and soda water. Here, we're using Jamaican rum (we recommend Appleton Reserve). The complexity of Amontillado sherry makes an incredible companion to funky Jamaican rum. With a bit of lime and effervescence from the soda water this cocktail comes out tasting like a Caribbean island drink with a heavy dose of Spanish flair. What's not to like?

How do I make simple syrup?

Simple syrup is best made in bigger batches. There are two common ways to make it: For the stovetop method, combine sugar and water in a saucepan and bring to a boil before turning down the heat and simmering until all of the granules are dissolved. It shouldn���t take more than a few minutes on the stove, but you’ll need to plan ample time to cool it down to room temperature before adding it into a cocktail. For simple syrup made without a stove, combine a 1-1 ratio of superfine sugar and hot water in a heatproof glass jar. Shake vigorously until the sugar has dissolved. Ingredients

  • 1 ounce Jamaican rum

  • 1 ounce Amontillado sherry

  • 1/2 ounce lime juice

  • 1/2 ounce simple syrup

  • 2 ounces club soda

  • Lime wedge (for garnish)

Directions

  1. Add rum, sherry, lime juice, and simple syrup to a cocktail shaker filled with ice. Shake until combined, about 15 seconds.

  2. Strain into a tall glass with fresh ice. Top with soda and stir briefly.

  3. Garnish with a lime wedge, squeezed into the drink.
