Maple-Roasted Brussels Sprouts with Bacon

These maple-roasted Brussels sprouts are subtly sweet, with savory crumbled bacon balancing the flavor. Serve this easy side dish with roasted chicken, pork or steak. To give it some extra flair, try swapping the bacon out for pancetta and garnishing the dish with fresh herbs such as chopped rosemary or thyme.

Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons pure maple syrup

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper

  • 1 ½ pounds Brussels sprouts, trimmed, halved or quartered if large

  • 2 slices bacon, chopped

Directions

  1. Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.

  2. Mix oil, maple syrup, salt and pepper in a large bowl. Add Brussels sprouts and toss to coat, Spread in an even layer on the prepared baking sheet. Roast, stirring halfway, until crispy and golden, 15 to 20 minutes. Transfer to a large platter.

  3. Meanwhile, add bacon to a small skillet over medium heat. Cook, stirring, until crispy, about 5 minutes. Remove with a slotted spoon to a paper-towel-lined plate.

  4. Sprinkle the bacon over the Brussels sprouts before serving.
