According to Food & Wine contributor Brian Freedman, the Empress 1908 Indigo gin is an especially excellent pick to use in a Bee’s Knees cocktail. “This is a layered gin whose incorporation of tea, ginger, and cinnamon finds a fantastic balance between earthy and spicy,” writes Freedman. “It’s purple from the use of butterfly pea flower, which grows lighter and more lavender- or pink-hued in the presence of acid, like citrus juice!”

Ingredients

  • 2 ounces gin

  • ¾ ounce lemon juice

  • ¾ ounce honey syrup

Directions

  1. Add gin, lemon juice, and honey syrup to a cocktail shaker filled with ice. Shake until chilled, about 15 seconds.

  2. Strain into a chilled coupe glass.
