Pineapple rum punch proves that tropical fruit flavors should be enjoyed all year long, not just during the warm weather months. This zippy punch is a celebration of all things pineapple and features the fruit four ways, leaning on pineapple juice, rum, syrup, and seltzer. Since pineapple can be quite tart, it is balanced with Velvet Falernum, a sweet liqueur. Serve this in a classic punch bowl with an ice ring filled with garnishes at a party, or simply add all the ingredients to a pitcher for a more casual vibe. Pineapple rum punch can be prepped in advance by adding all the still ingredients to an airtight container; top with fizzy pineapple seltzer right before serving for the best bubbles.

What is Velvet Falernum? 

Syrupy with a bit of citrus and spice, Velvet Falernum is a sweet liqueur that originated in Barbados. Developed by John D. Taylor, whose brand continues to be our go-to for the liqueur, Velvet Falernum is gently flavored with lime peel, clove, and ginger. At around 11% alcohol by volume, it is a comparatively low-proof liqueur. It plays a supporting role in the Pineapple Rum Punch and is delicious on its own in a simple highball when mixed with club soda — it benefits from a touch of lime juice if you have it.

This rum punch is full of fresh pineapple flavor. When picking a pineapple seltzer for this drink, look for one made with real pineapple juice for the most pure flavor; we like Spindrift seltzer for its balance of sweet and tart. Pimento bitters give this drink a balancing spiced aroma, but classic Angostura bitters work as a substitute and will double down on the citrus notes.

For a substitute, combine 3/4 cup simple syrup and 3/4 cup pineapple juice in a saucepan, and simmer until mixture has reduced to about 1 cup. The punch base, without seltzer, can be made up to 1 day in advance and stored in an airtight container in the refrigerator. Add seltzer just before serving.

Ingredients

  • 5 cups (40 ounces) pineapple rum (such as Plantation Stiggins’)

  • 4 cups pineapple juice

  • 2 cups fresh lime juice (from about 16 limes)

  • 2 cups (16 ounces) John D. Taylor’s Velvet Falernum Liqueur

  • 1 cup pineapple gum syrup

  • 1/2 teaspoon pimento bitters

  • 4 cups pineapple seltzer (such as Spindrift)

  • Ice ring, for serving

  • Grated nutmeg, lime wheels, mint sprigs, and whole star anise, for garnish

  1. Stir together rum, pineapple juice, lime juice, Velvet Falernum, gum syrup, and bitters in a large punch bowl. Stir in seltzer. Serve with ice ring and garnishes.
