Isle of Islay Swizzle

Smoky single-malt Scotches are almost never used in tropical drinks, but Julie Reiner was sure that one would taste great with passion fruit juice. At Lani Kai in Manhattan, she garnishes this swizzle with grilled pineapple, to play up the Scotch's smokiness.

Are you trying to find a good use for your single-malt Scotch in the summer? Even though smoky single-malts are almost never used in tropical drinks, Julie Reiner was sure that one would taste great with passion fruit juice. Ingredients

  • 1 1/2 ounces blended Scotch

  • 1/2 ounce coconut liqueur

  • 1/4 ounce single-malt Scotch, preferably Islay

  • 1 teaspoon Velvet Falernum (clove-spiced liqueur)

  • 1/2 ounce fresh lemon juice

  • 1/4 ounce passion fruit juice or nectar

  • Crushed ice

  • 1 pineapple sage sprig (optional), for garnish

Directions

  1. In a collins glass, combine all of the ingredients except crushed ice and the garnish. Add crushed ice. Spin a swizzle stick or bar spoon between your hands to mix the drink. Garnish with the sage sprig.
