I'll be honest: I don't gravitate towards many whiskey cocktails. It's not that I don't feel there's a time and a place for them — when the temperatures drop below 40 degrees, you'll find me seeking out an Irish Coffee or even a Manhattan. But when I found out that Dave Kwiatkowski of Detroit's Sugar House created this variation on the Old Fashioned by swapping gin for whiskey (and adds a splash of Campari for bitterness and a pleasantly rosy color), I couldn't help but celebrate.

Campari is the best-known liqueur in a delicious category called red bitter liqueurs, which include other favorites like Select Aperitivo or Contratto.  

How do I make Demerara simple syrup?

To make Demerara simple syrup, combine 2 parts sugar and one part water in a small saucepan. Cook over medium-high, stirring constantly, until sugar is dissolved, about 2 minutes. Let cool completely, about 30 minutes. Store in an airtight container in refrigerator up to 2 weeks.

Ingredients

  • 1 (2-inch) strip of lemon zest

  • 1 teaspoon Demerara simple syrup

  • 1 teaspoon Campari

  • 3 dashes of grapefruit bitters

  • Scant pinch of fine sea salt

  • 2 ounces gin (such as Ford's Gin)

  • Ice

Directions

  1. In a rocks glass, muddle lemon zest with simple syrup, Campari, grapefruit bitters and sea salt.

  2. Add gin and a few ice cubes and stir until well chilled. Top with more ice and serve right away.
