Instead of mixing salt with the other ingredients, Will Thompson sprinkles it on the large ice cube in the cocktail. As the salt melts through the ice, the flavor of the drink changes from bitter to briny.

Ingredients

  • 1 large ice cube

  • 2 ounces Lillet blanc

  • 1 ounce gentian aperitif, such as Salers or Suze

  • 3/4 teaspoon fresh lemon juice

  • 2 dashes of orange bitters

  • Small pinch of salt, for garnish

Directions

  1. Place the ice cube in a chilled rocks glass. Add all of the remaining ingredients except the garnish and stir well. Sprinkle the salt on the ice.
