Store leftover ginger syrup in the fridge for up to 3 weeks.

Ingredients

Ginger Syrup

  • 6 ounces simple syrup

  • 1 ounce fresh ginger, peeled and diced

Cocktail

  • Ice

  • 2 ounces amber rum

  • 1 ounce coconut water

  • 1 ounce fresh lime juice

  • 1 ounce Ginger Syrup

  • 1 lime wheel

Directions

  1. Make the Ginger Syrup

    In a small saucepan, bring the simple syrup to a boil. Remove from the heat and add the ginger. Let cool, then refrigerate overnight. Strain the syrup into an airtight container.

  2. Make the cocktail

    Fill a cocktail shaker with ice. Add all of the remaining ingredients except the lime wheel and shake well. Strain into a chilled martini glass. Garnish with the lime wheel.
